Ingredients for the turkey zucchini meatballs

Turkey Zucchini Meatballs - Air Fryer Recipe (3)
  • Ground turkey – I recommend 93/7 lean ground turkey. You can also use ground chicken in this recipe, although the meatballs will take a little less time to cook.
  • Zucchini – fresh shredded zucchini with the water squeezed out. More on that is below.
  • Olive oil – this gives the meatballs a nice crispy outer layer and keeps them moist while they cook. You can also use avocado oil.
  • Italian seasoning, garlic powder, onion powder, Chili Powder – the combination of these spices provides some Italian flavor to these turkey zucchini meatballs that are amazing.
  • Salt & pepper – just kosher salt and ground black pepper to bring out all of the wonderful flavors of the meatballs.

How to shred Zucchini?

The best way to shred zucchini is to use a box grater. For this recipe, I like to use the smaller grated side so the zucchini is easier to mix in with the ground turkey and other ingredients.

How do you remove extra water from zucchini?

This is fairly easy to do. After you have shredded the zucchini, place it in a clean kitchen towel and wring out the excess water over the sink or over a bowl. Then combine the zucchini with the rest of your ingredients.

  • Shred the zucchini and make sure to remove excess water as suggested in this post. This will ensure your metaballs come out golden and juicy and not watery.
  • Space the meatballs out in the air fryer so they are not touching. This will allow them to get nice and golden brown on all sides.
  • Cook the meatballs until the internal temperature reaches 165 degrees F.

Description

You are going to love these juicy, golden turkey zucchini meatballs. You can make them in the air fryer or bake them in the oven and they come out perfectly tender and packed with flavor every time! Ready in 20 minutes, gluten-free, and paleo.

Ingredients

Scale

  • 2 lbs 93/7 ground turkey
  • 1.5 cups shredded zucchini
  • 1 tablespoon olive oil – optional for extra crispy meatballs
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon Chili Powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper

Instructions

  1. Prepare the zucchini. Shred the zucchini using a box grater, or you can cut it into chunks and pulse it a few times in the food processor. Then place the shredded zucchini onto a clean towel and squeeze any extra moisture out of it over a bowl or the sink. Discard the liquid.
  2. Mix up the meatball mixture. Add the zucchini, ground turkey, olive oil, Italian seasoning, garlic powder, onion powder, chili powder, salt, and pepper to a large bowl and use your hands or a fork to combine the ingredients.
  3. Form the meatballs. Use your hands or a small ice cream scoop to roll the mixture into 20 even-size meatballs.
  4. Cook. Preheat the air fryer to 390 degrees F. Add a parchment paper liner or some foil to the bottom of the air fryer basket and spray it with cooking spray to prevent sticking. Place half of the meatballs into the air fryer basket in an even layer, about 1-inch apart. You will probably need to cook them in batches. Cook the meatballs for 9-11 minutes until they are nice and golden and cooked through. You want to cook them until the internal temperature reaches 165 degrees F. Continue until you have cooked all of the meatballs.
  5. Serve. Serve warm with some pasta or topped with some zesty tomato sauce.

Notes

  • Use good quality ground turkey that is 93/7.
  • Make sure to squeeze the extra moisture out of the zucchini before you add it to the meatballs mixture.
  • Cook the meatballs until the internal temperature reaches 165 degrees F.
  • Store these meatballs in an airtight container in the refrigerator for up to 3 days. You can reheat them in the air fryer or the microwave.

FAQs

Why are my turkey meatballs rubbery? ›

Meatballs get tough when they are overmixed. The mixing of meat causes the myosin in the muscles to form protein strands. These act like gluten in bread dough, trapping liquid and firming the texture. You want to mix the meatballs until the meat just starts to seem a little fibrous.

How long does it take to air fry a turkey? ›

Set air-fryer temperature to 400° F. Cook 45-60 minutes, about 7-10 minutes per pound, until a food thermometer inserted registers 165° F. Let stand for 10 minutes before carving.

Can you cook frozen turkey breast in air fryer? ›

Tips for Making Air Fryer Turkey Breast

While it's certainly possible, I don't recommend it. I say this because you can't prep the meat with oil while it's frozen, and it's likely that the seasonings won't stick to the skin. So, for the best results, thaw it in the fridge before air frying.

How do you keep turkey meatballs from falling apart? ›

I don't suggest using 99% lean ground turkey as it may result in tough meatballs. Breadcrumbs: Breadcrumbs combine with the egg to help bind the turkey together to keep the turkey meatballs from falling apart. They also hold moisture, which helps keep the meatballs tender.

Do meatballs get more tender the longer they cook? ›

Tenderizing the Meat:

As the collagen in the meat dissolves over time, it transforms into gelatin, which not only adds a silky texture to the sauce but also contributes to the overall richness and depth of flavor. The longer the simmer, the more tender and succulent the meatballs become.

Is it better to air fry or bake turkey? ›

Cooking a turkey in an air fryer is a healthier, and typically quicker, alternative to traditional roasting and proves, again, how versatile air fryers can be. Most of the preparation and cooking steps are the same as those you need to be mindful of when cooking turkey in a regular oven.

Is air frying a turkey worth it? ›

Air Fry Turkey Dinner

Luckily, with an air frying range, your turkey will always come out with a perfectly crisp outer skin without sacrificing any juicy flavor. This way, you won't need cranberry sauce to save your meal, but you can still enjoy it on the side.

Should I air fry or deep fry turkey? ›

Air-fryers are known for being a great method for crispy foods, and not just because they manage to do it without much oil. If you prefer your turkey on the crispier side, consider using an air-fryer. All the effort that goes into deep-frying a turkey does result in a rewarding amount of flavor and juiciness.

Can you air fry a Butterball turkey breast? ›

A 3-pound boneless turkey breast (like the Butterball turkey breast), cooks in the air fryer in 1 hour to 1 hour 10 minutes at 350 degrees F. A 4- to 6-pound bone-in turkey breast cooks in the air fryer in 40 to 50 minutes at 350 degrees F.

Is it better to cook a turkey frozen or thawed? ›

Benefits of Cooking a Frozen Turkey

The white and dark meat will cook properly and you may find your turkey is less likely to have dry breast meat than when you cook a thawed turkey. Refrigerator Space: No thawing means no turkey taking up space in your fridge and no stressful thawing process.

Should you cover turkey breast with foil? ›

To achieve a perfectly golden, juicy turkey, let the bird spend time both covered and uncovered in the oven. We recommend covering your bird for most of the cooking time to prevent it from drying out; then, during the last 30 minutes or so of cooking, remove the cover so the skin crisps in the hot oven.

How long does it take to rotisserie a 3 pound turkey breast? ›

Cook the turkey breast

Cook until the turkey breast reaches 165°F in its thickest part (about 1 ¾ hours), then add 5 minutes more cooking time.

What causes rubbery meatballs? ›

It all starts with the meat

If poultry is your meat of choice, pay extra attention not to overcook the meatballs, as they can turn rubbery very easily. Fry in plenty of oil or lard to keep them moist and cook them slowly on low heat after they are seared.

How do you make meatballs not rubbery? ›

Not adding any moisture to the meat.

Without it, the protein content forces the meatballs to shrink as they cook, and produces a final dish with a tough texture. → Follow this tip: To ensure tender meatballs, be sure to include eggs or a binder, like bread crumbs soaked in milk, in the mix.

What makes meatballs taste rubbery? ›

If the meatballs are packed together too tightly, they will cook up rubbery, chewy, and tough. If the meatballs are different sizes, they will cook unevenly. The smaller meatballs may end up dry and overcooked, while the larger ones may end up undercooked.

How do you make turkey less rubbery? ›
