How to make no bake Oreo truffles recipe from scratch?

  1. Crush Oreos- Into fine crumbs.
  2. Mix in cream cheese- Until combined.
  3. Scoop dough-And roll Into small balls.
  4. Chill balls- In the freezer.
  5. Dip balls-In melted chocolate.
  6. Let chocolate set- At room temperature.

Why do my Oreo balls crack?

This usually happens if the dough balls are too cold. If you coat something that's super cold in something hot like melted chocolate, the center will expand quickly as it warms up, causing the ball to crack. The best way to avoid this is by using dough balls that are not super cold and melted chocolate that's not super hot. Temperature is key here.

How to crush Oreos?

There are two basic methods to crush your Oreos into fine crumbs. One is to place the cookies in a Ziploc bag and crush it it with a rolling pin or hammer. The other method is to use a food processor, which is what I did. In the latter version you can simply pulse the cookies until fine crumbs form, then add in the cream cheese and pulse again until combined. It's so much easier.

Do Oreo balls/ Oreo truffles have to be refrigerated?

Yes, because they are made with a dairy product, cream cheese, that needs to be refrigerated in order to stay fresh. Also, keeping them refrigerated ensures that they keep their shape and firmness.

Variations forOreo cookie balls/ cheesecake balls/ truffle balls

Try a flavored cream cheese- Such as honey, cinnamon, pumpkin spice, mixed berry, strawberry. They also get unique flavors in stores during holidays like mint or peppermint during Christmas time.

Substitute cream cheese- Believe it or not, you can also use Biscoff, peanut butter, Nutella, or other yummy fillings. Frosting is another great choice. Try any one of these:

  • Easy Mint Frosting
  • Caramel Frosting (3 Ingredient)
  • Peanut Butter Frosting (4 Ingredient)
  • Marshmallow Frosting Recipe
  • Strawberry Buttercream Frosting

Use different coating- Although I used white chocolate for dipping/ coating, you can also try semisweet or dark chocolate. Other options include almond bark, peppermint bark, cocoa powder, or powdered sugar.

Try other truffle toppings- Such as various sprinkles, chopped nuts, mini chocolate chips, chopped up candies, chopped up dried fruit, crushed peppermint sticks, crushed freeze-dried fruit, crushed pretzels, cinnamon, sparkling sugar or shredded coconut.

Use Golden Oreos- Instead of using the classic chocolate Oreo, you can replace it with the golden version for a different taste and color.

Try mix-ins in batter- Use mini chocolate chips, crushed nuts, chopped up candy bars, or mini candies.

Tips and Techniques

Use full fat cream cheese- Because it adds a richer taste and yields a better overall texture.

Don't use double stuffed cookies- Because the mixture becomes too sticky from all that extra filling.

Why is my mixture wet and sticky? How to fix it? You may have used double stuffed Oreo cookies, which will make the mixture too sticky. Also, too much cream cheese can also do this. Be sure to use regular Oreos and measure ingredients correctly.

Why is my mixture dry? How to fix it? You need to make sure your cookies and cream cheese are very well mixed. The Oreo crumbs should be FINE. Otherwise your truffles won't stick well together because they will be dry. You can also add a little water or milk or a little more cream cheese, if absolutely needed, but just a small amount.

Use disposable gloves-To avoid melting the chocolate on the truffles with your fingers.

Use a small ice cream scoop or measuring tbsp- In order to make all the truffles the same size.

If the weather is hot- Work in small batches while the rest of the mixture stays refrigerated.

Refrigerator- Store in an airtight container for up to 3 days.

Freezer- Store in an airtight container for up to 1 month. Thaw in fridge and enjoy.

Room temperature- This is not recommended as the cream cheese can go bad.

Make ahead instructions- These can be made 2-3 days in advance and stored in the refrigerator.
