How do the spring onions taste caramelised without heating them?! This was amazing. I would quite happily eat bowls of this as a snack, lunch, dinner and maybe even breakfast. This will be a go to recipe for me. Great way to add more veggies to dishes

Is blanching the spinach necessary? can the same effect come from briefly microwaving the damp leaves?

      Hi Helen,

Certainly, blanching the spinach is necessary. Both blanching and microwaving have similar effects in terms of softening the leaves and preserving the vibrant green color of the spinach.

Let me know if you have any other questions.
