yes! and if they put up a recipe for "sausage and peppers" people would be all up in the comments saying "who needs a recipe for this?!" (or, perhaps more likely, "this is not exactly how my great great great grandfather made it, how dare you nyt, and shame on all of you who made it this way!") suggestions are great, but if you want to make a different recipe, just make a different recipe and spare the rest of us.

Sauteed green (or red) peppers and sautéed onions would be my choice for the vegetable garnish, not cole slaw or cabbage salad.

Good Italian sausage is easy to get in New York but in the provinces, it is much harder to find the real deal. And for those of us in Europe, it is nearly impossible. Even imported Italian sausage, from Italy, is not like a good NYC Italian sausage. American Italian sausage is a regional speciality! So can we get a recipe for making Italian sausage from scratch at home that tastes as good as Faicco's?

NY Times should label this as "easy". This made a quick, improvised dinner to eat while watching the basketball game. Had uncooked Italian sausages on hand, so I split them up the middle and broiled them in the oven for a few minutes on each side. I used swiss cheese instead of provolone and good hamburger buns. I didn't have pickled peppers so used small black olives that I pitted and chopped, along with a couple teaspoons of olive juice.

If you prefer peppers and onions, then by all means, go make a sandwich with peppers and onions. I made this particular recipe last night and the slaw was a faster and delightfully perkier touch. Next time I think I'll use only 2 tablespoons of mayo and more pickled-pepper juice just because I like slaws on the more vinegary side.

Delicious way to serve Italian sausages! I love the simplicity of the slaw, and the extra kick of flavor from the pickled peppers. I certainly understand those who prefer sausages with peppers and onions, and I think that is a great way to eat them. But if we only eat what we already know we love, we will miss out on experiencing new combinations of ingredients that we might end up liking just as much or more than our tried and true pairings.

Expat here, based in a Muslim country where pork is hard to find, and Italian sausage nigh impossible. But regular sausage IS available. I squeeze them out of the casings and mix in spices so it tastes like Italian sausage: for 1 lb meat, add 1 tsp crushed fennel seed + 3.5 tsp dried herb mix + 1.5 tsp garlic powder + 0.5 tsp paprika + pinch of crushed black pepper + pinch of chili flakes. This way the meat is crumbled instead of in proper sausage form, but I don't mind. (:

Lorraine, I am married to an Italian. But we both say "variety is the spice of life" for this really good recipe. I think that's why one "messes" with the traditional success of sausage and peppers for Italian cooking. ;-)

Try it just the way it is before you start messing with it. It turned out to be a nice change from the traditional sausage & peppers I've been eating since I was a kid. Cooking the sausage while I cooked dinner the night before made this a breeze to get to the table. We all need fast easy dishes for those days when you know you're going to be too slammed to get a real dinner done.

Bag the Coleslaw. Make Italian slaw. Get Savoy cabbage, slice it. Saute minced garlic & red paper flakes in olive oil. Add in the cabbage. Season with salt & pepper. Stir until cabbage is wilted. Throw on top of sandwich after melting provolone on sausage.

For me an Italian sausage sandwich will always be the classic New York street food version, with sautéed green pepper and onion.

Bob: Thanks for pointing this out. I think this is an all-too-common mistake of many ethnic recipes in the NY Times, the assumption the ingredients are readily available to everyone. There always needs to be something that says, "if you can't get this then use... ." "if you can't get this then use... ."

I live on Connecticut and good Italian sausage is available. I, however, have no place to get the Asian peppers and sauces so often mentioned here.

After trying many different brands of vegetarian "Italian sausage". Trader Joe's brand is the clear winner for texture and flavor. It's in the vegetarian cold cuts and tofu section. I too wood take 5 minutes to sautee onions and peppers over the Cole slaw for topping.

I grew up in Beverly (southwest side) in a Southern Italian household. When I was a kid my Nonna would fry up sausage and potatoes together and then dip the bread in the sausage grease. So good!!

We ended up landing on using one 10oz bag of shredded cabbage and two jars of mt olive sweet heat banana peppers. We also went with hot Italian sausages and grilled them first (skipping the warming under the bread step). I probably used a teaspoon of kosher salt too. Overall, the sweet heat and hot Italian paired very well.

Kudos to the food stylist who made me want to eat one of these immediately...but sadly...meh. Made exactly as written and they were just okay. I used hot cherry pickled peppers and doubled the amount but it still lacked the zip I was looking for. If I were to attempt again I would use hot Italian sausage. I would also not use ciabatta rolls - they were too big and dense and overwhelmed the rest of the meal - I would try rolls that are fluffier, lighter.

I like the slaw counterpoint to the hot spicy sausage. I've made similar with turkey andouille sausage that I'm sure will offend some who will claim andouille can only be made w/ pork except these are outstanding and even the purveyor contends they are better than pork. I have taken to roasting my sausages in a Breville toaster oven which saves me some cleanup, especially since I'm cooking for one. Lightly toasting (or grilling) the bun makes it even better.

I found this recipe really bland. It was was disappointing...maybe it’s the German in me, but felt it needed mustard...

You could always add it after the first bite. But if the sausages were the hot sausages, rather than sweet sausages, I don't see how they would be bland. But I agree, mustard and sausages go well together.

This was a big hit tonight with the family for dinner. Roasted slices of tofu in the oven with olive oil, salt and pepper and used that instead of sausages for a veggie alternative. Really delicious.

As a shortcut when time is tight, I use packaged precooked Italian sausages (either sweet, hot, or with fennel) from the supermarket in my several Italian recipes calling for sausages. With all the other ingredients, the sausages taste as if cooked from scratch!

although changes to the recipe can be annoying, i look at them at helpful ideas for substitution and heads up to possible problems. I'm happy to learn from the pros and fellow foodies!
