Gordon Ramsay’s Roasted Pumpkin Soup Recipe


Pumpkin is also somewhat sweeter than many other squashes, which allows it to be used in both sweet and savory dishes.

I watched Gordon cooked this dish for his kids on a TV show he was featured. His adorable kids loved it.

This copycat recipe is my take on it. Roast the pumpkin chunks before adding for an extra layer of flavor.

Serves 4– 6

INGREDIENTS:

1 large onion, sliced
1 and ½ lb. pumpkin peeled and cut into chunks
1 lb potatoes, diced or sliced
2 and ½ cups vegetable stock
½ tsp freshly grated nutmeg – to taste
1 tsp chopped fresh or ground dried tarragon – to taste
2 and ½ cups milk, or half and half for a richer soup
2 tsp lemon juice – to taste
Salt and freshly ground black pepper – to taste
1 tbsp olive oil
2 tbsp butter


COOKING PROCEDURE:

1) Heat the oil and butter in a heavy saucepan and sauté the onion for 4– 5 minutes over medium-low heat until soft but not browned, stirring frequently.

2) Add the pumpkin and potatoes, stir well, cover and sweat over low heat for about 10 minutes until the vegetables are almost tender, stirring occasionally to keep from sticking or browning.

3) Stir in the stock, nutmeg, tarragon, lemon juice and seasoning. Bring to a boil and simmer for about 10 minutes until the vegetables are completely tender.

4) Allow to cool slightly, then pour into a food processor or blender or use a reliable hand blender and process until smooth.


5) Return to saucepan and add milk. Heat gently and taste, adding extra lemon juice or seasonings to your taste.

6) Serve piping hot with a dollop of butter, sour cream, yoghurt, or crème fraîche and a sprinkling of chives, green onions or fresh parsley as a garnish.

What is Creme Fraiche? Is a thickened cream with a slightly tangy, nutty
flavor and velvety, rich texture.

7) Light garlic buttered croutons are also a welcome garnish, but go easy on the garlic as it can overpower the delicate flavor of the soup.

How to Roast Pumpkin in the Oven?

Step 1. Preheat oven to 200°C /180°C fan-forced. Line two large baking trays with baking paper. Place pumpkin and garlic in a bowl. Add oil. Season with salt and pepper. Mix or toss to coat.


Step 2. Arrange pumpkin mixture, in a single layer, on prepared tray. Bake for 40 minutes or until pumpkin is golden and tender.


How to Roast Pumpkin without Oven?

Roasting on the Stove. Warm a heavy-bottomed pan on medium-high to high heat. Do not use a nonstick pan, as this will stop pumpkin from browning.


Choose a wide-bottomed pan to cook more pumpkin at once. Preferably, it should have low edges, as high sides will capture the steam from the pumpkin as they cook, leading to a mushy texture.

Add a thin layer of coconut oil to the pan, coating the entire bottom. When the coconut oil is smoking, add the pumpkin.

Cook in batches if you are roasting many pumpkins. Overcrowding can lead to poor caramelization and mushy vegetables, so leave a little bit of space between the pumpkins for best results.

Slowly stir the pumpkin once or twice during roasting, but leave them mostly undisturbed to help them roast perfectly.

1. How to cut a pumpkin into wedges? Use a large cook's knife to cut pumpkin into wedges. To make it easier, use the ridges in the pumpkin as a guide.


2. Use a metal spoon to remove seeds from one wedge.

3. Place the pumpkin flat and use a large sharp knife to remove the skin from each wedge, if desired.
